Truffled Celeriac Mash

A delicious, creamy, mash with a hint of truffle. This side dish is a great accompaniment for all kinds of meat. It’s a fabulous replacement for standard mashed potatoes with a fraction of the carbohydrates!

Truffled Celeriac Mash

Equipment

  • 1 Thermomix optional
  • 1 Large Pan

Ingredients

  • 400 g Celeriac peeled and diced
  • 50 g Butter
  • 1 clove Garlic
  • 2 Shallots banana
  • 500 ml chicken stock
  • 80 ml double cream
  • 1 tsp porcini powder optional
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp truffle oil or to taste
  • 3 tbsp Nutritional Yeast

Instructions

  • Melt the butter and add the shallots and garlic to the pan. Cook on a medium heat for 2-3 minutes.
    50 g Butter, 1 clove Garlic, 2 Shallots
  • Then add the celeriac and saute on a medium heat for 10 minutes.
    400 g Celeriac
  • Add the stock, salt, pepper and porcini powder. Bring to the boil. Then reduce the heat and simmer for 15 minutes until the celeriac is soft
    500 ml chicken stock, 1/2 tsp sea salt, 1/2 tsp black pepper, 1 tsp porcini powder
  • Drain the liquid away. Blend the celeriac, nutritional yeast, cream and truffle oil until silky smooth.
    80 ml double cream, 3 tbsp Nutritional Yeast, 1 tsp truffle oil

Notes

If using a Thermomix

  1. In the mixing bowl add 50g butter, 2 banana shallots, sliced & 1 garlic clove then chop 1 min/speed 4
  2. Scrape down the sides and cook for 2 min/100°C/speed 2
  3. Add the 400g celeriac, peeled & diced to the bowl and cook for 8 min/100°C/speed 2
  4. Then caramelise for a further 2 min/Varoma/speed 2
  5. Add 500ml chicken stock, 1/2 tsp sea salt, 1/2 tsp black pepper & 1 tsp porcini powder and cook for 12 min/100°C/speed 2
  6. Drain the liquid off. Add 3 tbs nutritional yeast, 80ml double cream and 1 tsp truffle oil (or to taste)
  7. Mash for 10 sec/speed 4
